As I calculate it, you would need approximately 6.5" - 7" of fall over the 30' run. Our 2810HR allows a 6" diameter hole, which would be centered vertically on your 2x10 (9.25"). This would leave approximately 1.5" of wood at the top and the same at the bottom. That would only give you 4.5" of fall. Our 210nr's Notch Reinforcers have a 3" deep notch. Use several of these for the first and last few joists could give you an additional 1.5" at each end of the run. This would give you a total of 7.5" of fall. This is assuming the drain line would start at the very top of the joist, and end at the very bottom.
It sounds like a possibility. I would mark it all out on the joists to make sure. Also, the holes for the 2810hr's can all be 6" diameter. Our certified lab testing determined that the 2810hr was more than adequate to restore the strength of joist with a 6" diameter hole. And there is a 5x margin. So you can be confident enough to have all 6" diameter holes rather than using smaller holes and having to set set each one at a different level in order to accomplish the pitch that you need.
